End of Summer: The Last CSA Box, Full of Squash and Sweet Potatoes, Hints at Chilly Days Ahead

L1060610lastCSAbox%3A2%3A460wide.jpg
There's no better barometer of the changing seasons than the contents of the last CSA box. This one was full of sweet potatoes, onions and three kinds of winter squash.

For a week now the geese have been flying south across the fields in a V-formation, honking loudly. The leaves on the fig tree are turning rusty. The tadpoles in the water pots have left for parts unknown.

Like it or not, summer's on its way out.

There's no better barometer of the changing seasons than the last CSA box. Actually our last box was a brown paper bag, containing sweet potatoes, red onions, red Kuri squash, acorn squash, butternut squash, and the very last carton of Sungold tomatoes, ripe and sweet, still tasting of the late summer sun.

Luckily winter squash is the perfect palette on which to unleash the contents of your spice cabinet. Here are some recipes to look forward to:

Winter Squash Tagine with Fire Roasted Peppers and Black Olives

Roasted Pumpkin Squash Soup with Cinnamon, Coriander and Fresh Ginger

Coconut-Curried Butternut Squash, Potatoes and Eggplant with Baby Ginger, Red Chile and Lime

Sweet Potatoes with Aziza Curry and Thyme

Indian-Spiced Sweet Potatoes with Kashmiri Chilies, Turmeric and Cinnamon

Nancy:

I love the end of summer veggies. And the fall ones most of all. Our CSA shares will go a bit longer through October and I can't wait for the winter squash. It's one of my favorites.

The pumpkin squash soup you link to sounds wonderful. And the advice you give on breaking into one, "And for heaven sakes, wait till you’re done to have a drink."--should certainly be heeded. What better way to earn a drink than to tackle one of those really big ones? Soon I'll have my chance!

Me too! I have two Red Kuri squashes sitting on the counter, just waiting to be turned into soup!
